Banana Bread

excellent banana bread for breakfast. As a dessert, serve with ice cream or with fruit

Found this recipe in a Georgia travel magazine that I picked up at a Georgia Visitor Center several years ago. 


1 ½ cup all-purpose flour
¾ tsp baking soda
¼ tsp salt
1 cup sugar
2 eggs, lightly beaten
¾ cup oil
3 Tbsp buttermilk

3 medium bananas, mashed
½ cup chopped walnuts

Preheat oven to 350 degrees F.
Line a 8 X 4 loaf pan with parchment paper; set aside
On a piece of wax paper, combine flour, baking soda and salt.
In a mixing bowl, whisk together oil, eggs, sugar and buttermilk
Stir in the flour mixture. Fold in bananas and nuts and pour into prepared pan
Bake for 55 mins or until toothpick inserted near the center comes out clean.

Cook's Note
Substitute buttermilk - use milk and squeeze a wedge of lemon juice.
I usually cut down on the sugar and oil, and often substitute blueberries or cranraisins for the walnuts.
